Dupe Erewhon Raw Vegan Cinnamon Rolls

I found myself getting these every single time I went to Erewhon because they're that good. And personally, I never thought I would this big of a fan of a raw vegan treat but here we are, making a dupe of them. They're 100% worth it.
The recipe comes together pretty quickly and can be adjusted to taste (want them a bit sweeter add in more maple syrup) or you can sub for honey but it will change the flavor. The only thing I don't reccomend is subbing is the pecans, flour, cinnamon because it drastically changes the texture and flavor.

Ingredients:
Dough 1
1 cup oat flour
1 cup pecans
2.5 tbsp psyllium husk + ⅓ cup of water
¼ cup maple syrup
Filling
1 cup dates
2 tbsp maple syrup
2 tbsp of plant milk
pinch of salt
3 teaspoons of cinnamon
Handful of pecans
Method:
Mix the psyllium husk + ⅓ cup of water, stir and let it sit for 10 mins
Blend the pecan nuts
Add in the oat flour, psyllium husk, maple syrup to the pecan mix and blend until a dough forms
Place the dough on a piece of parchment paper and gently knead it into a ball. Shape the ball into a rectangle. Cover the top of the rectangle with more parchment and use a rolling pin to shape so the long side is 9 inches and the thickness is under ½ an inch
Blend all the filling ingredients expect pecans
Spread a thick layer of the following on the crust.
Before rolling up, sprinkle a handful of chopped pecans across the filling
Start rolling from the long side with the help of parchment paper
Refrigerate for at least 3 hours or overnight is best
Cut into bite size rolls
Serve: I like to cut them into bite size pieces and keep them in my fridge. They store up to about a week and are soo good with your breakfast tea or a mid-day afternoon snack. Enjoy!
