Beef Stroganoff – The Adult Version of Hamburger Helper

Let’s be honest—if you grew up on that boxed classic, you know the nostalgia of creamy, beefy pasta. But this? This is the grown-up, glow-up version. We’re talking caramelized onions slow-cooked to bring out their natural sweetness, nourishing grass-fed beef, and a sauce so velvety you’ll never look at the old stuff the same way again. Plus, with clean ingredients that love you back, this meal is just as comforting as you remember—only better.
And hey, who says being an adult means giving up on childhood favorites? We just make them fancier.
Makes 2 servings | Ingredients
½ lb grass-fed/finished ground beef
3 tbsp ghee
½ medium onion, thinly sliced
5 oz mushrooms, thinly sliced
2 cloves garlic, grated
2 tbsp coconut flour
½ cup chicken or beef broth (add more as needed)
1 tbsp coconut aminos
2 tbsp A2 grass-fed yogurt
Salt & pepper, to taste
4 oz gluten-free pasta
Handful of fresh dill and/or parsley, minced for serving
Instructions
Caramelize the onions: In a large pan over medium heat, melt 2 tbsp of ghee. Add the sliced onions with a pinch of salt and cook low and slow for about 15 minutes, stirring occasionally, until they turn translucent and golden. I don’t like to fully carmelize mine for this recipe but get them close to jammy. Patience pays off!
Sauté the mushrooms: Add the mushrooms to the pan and cook for another 5 minutes until they release their juices and get that deep, earthy flavor.
Brown the beef: Push the onions and mushrooms to the side and add the remaining 1 tbsp of ghee. Crumble in the ground beef, season with salt and pepper, and cook until browned, about 5 minutes.
Make the sauce: Stir in the grated garlic and coconut flour, mixing well to absorb any excess fat. Cook for 3 minutes. Then slowly pour in the broth and coconut aminos, stirring constantly to create a silky, rich sauce. Let it simmer for 5 minutes to thicken.
Cook the pasta: While the sauce simmers, cook your gluten-free pasta according to package instructions. Drain and set aside.
Finish with creaminess: Turn off the heat and stir in the A2 grass-fed yogurt for that classic Stroganoff tang. Taste and adjust seasoning if needed.
Serve & garnish: Mix in the pasta, spoon it into a dish top with fresh dill or parsley for a pop of brightness.
