Decadent Chocolate Mousse with Tofu

This treat is made with a few ingredients, comes together quickly, and tastes amazing. It’s a chocolate mousse made with tofu so it’s higher in protein, dairy-free and gluten-free.


My kind mother-in-law brought back freshly made chocolate from cacao beans in El Salvador so I used that in my recipe, but, if that’s not accessible, you can totally substitute with semi-sweet chocolate chips and melt it down. 


I’ve always used Tofu in savory dishes but after this recipe I’ll be testing it more often in deserts. It can easily soak up the surrounding flavors and blends smoothly giving it a perfect velvety mousse texture.

Servings: 4


Ingredients:

  • 1 block (14 oz) silken tofu

  • 3 tablespoons cocoa powder

  • 1/2 cup chocolate chips, melted

  • 1/4 cup honey (adjust to taste)

  • 1 teaspoon vanilla extract

  • Pinch of salt


Topping ideas:  

  • Chopped nuts (walnuts, almonds, pistachios, hazelnuts) 

  • Shredded coconut 

  • Berries (strawberries, raspberries, blueberries, blackberries) 

  • Bananas, mangos, passion fruit


Method

  1. Drain the silken tofu and pat it dry with paper towels to remove excess moisture.

  2. In a food processor or blender, combine the tofu, real cocoa powder, melted real cocoa chocolate, honey, vanilla extract, and a pinch of salt.

  3. Blend the mixture until smooth and creamy, scraping down the sides of the bowl as needed to ensure everything is well combined.

  4. Taste the mousse and adjust the sweetness by adding more honey if desired.

  5. Transfer the chocolate mousse to serving bowls or glasses, cover, and refrigerate for at least 2 hours to allow it to set and chill.

  6. Before serving, garnish the mousse with your favorite toppings




Notes: 

  • For a vegan version, you can use maple syrup or agave nectar instead of honey.

  • Feel free to experiment with different toppings such as chopped nuts, coconut flakes, or mint leaves for added flavor and texture.

  • Make sure to use high-quality real cocoa powder and real cocoa chocolate for the best chocolate flavor in your mousse.

  • You can store it in an airtight container for up to 3 days.
